Get Them Sharp
The Sharp Brothers use state-of-the-art equipment. Their 320 gritted, one-inch belt sander lays a fine burr and then a high-speed paper wheel removes it making a perfect edge without taking off much steel.
Keep Them Sharp
Once your knives are nice and sharp, the Sharp Brothers offer some easy tips for keeping them that way:
Throw knives in a sink full of water and dirty dishes—they can be damaged.
Put knives in a dishwasher.
Use a glass or ceramic cutting board.
Throw knives in the drawer with other utensils.
Sharpen using the steel rod that often comes with a knife set.
Wipe knives with a warm cloth and then immediately store in a block or on a magnetic knife strip.
Make sure these knife holders are slant no more than 180 degrees and are stored one step away from the sink.
Use wood or plastic cutting boards.
